Bollington Brewery has will be unveiling its new Cask format beer at the Manchester Beer and Cider Festival this week.
Developed by head brewer, Simon Whatmuff, Defiance is a black IPA with a distinctive toasty, dark malt character. It is described as ‘a slick jet black IPA, bursting with tropical flavours and aromas’.
The name is derived from the original mill site in Bollington where the first brewery was built in the late 1800s, so has lots of local resonance.
A complex mix of dark malts and West Coast American hops, Defiance is now available on keg in The Park Tavern (Macclesfield), The Vale Inn (Bollington) and The Cask Tavern (Poynton), which are all part of The Bollington Brewing Co estate. It can also be enjoyed at the Chiverton Tap in Cheadle Hulme..
The ale is the latest addition to the brewery’s award-winning range of beers, which have earned industry recognition over the course of the last eight years.
